Cheat Chicken Fajitas

Nothing beats Mexican on a hot summer night. Not only is it tasty, but it’s totally one of the easiest meals to cheat with when cooking! Our Cheat Chicken Fajita tacos are so easy you’ll be wanting to cook it every night!

Serves 4.

What you need:
  • 500g chicken mince

  • ½ red capsicum, thinly sliced

  • ½ yellow capsicum, thinly sliced

  • ½ orange capsicum, thinly sliced

  • 2 avocados

  • 2 red onions, 1 sliced and 1 diced

  • 1 lime, juiced

  • a handful of fresh coriander, chopped

  • salt and pepper

  • 1 tbsp Sahara Moroccan Fructose free seasoning

  • 1 tbsp Sass Smokey seasoning

  • 15-20 lettuce leaves for tacos

  • cheese, salsa, sour cream etc, for serving

How to make:
  • In a medium frypan cook the chicken mince, sliced red onion, capsicums and Mingle seasonings until browned and fragrant.
  • Meanwhile make the guacamole by mashing the avocado with a fork in a bowl and add the diced red onion, lime juice, coriander and season with salt and pepper
  • To make the tacos, place some chicken fajita in a lettuce cup and top with guac + your favorite toppings
