FAJITA FRIED RICE

You'll Need:
- 1 x Mingle Fajita Recipe Base
- 500g chicken breast stir fry strips
- 1 tbsp extra virgin olive oil
- 1 red capsicum
- 1 green capsicum
- 1 onion
- 1 tbsp crushed garlic
- 500g microwave rice or 3 cups cooked rice
- 100g baby spinach
- 2/3 cup chicken stock
- Juice of one lime
- To serve try - mashed avocado, natural yoghurt.
