Sticky, glossy, and a little over the top, just like Christmas should be. This ham is made for carving thick slices, piling plates high, and sharing with the people who matter most. Forget weeknight cooking, indulge a little, pass the platter, and let the table laughter be the soundtrack to this day. You have earned a break and a moment to enjoy your year, your nearest and dearest, and a darn good meal that will have leftovers for days. Merry Christmas from team Mingle. Time: 20 mins prep plus 2 hours cooking

Ingredients

Method

  • Make the glaze: In a small saucepan, combine all ingredients except cloves. Heat gently, stirring constantly, until the mixture begins to bubble slightly. Remove from heat and set aside. Preheat oven to 160°C.
  • Prepare the ham: Remove the skin, leaving the fat intact. Score the fat in a diamond pattern, then stud with cloves. Place ham on a rack in a large roasting pan.
  • Add citrus: Squeeze the juice of the orange over the ham, then tuck the squeezed quarters and zest into the roasting pan around the ham.
  • Glaze generously: Brush or spoon half of the glaze over the ham. Do not worry if some runs off, juices will caramelise as they drip down during cooking.
  • Bake low and slow: Pour 1½ cups of water into the base of the roasting dish. Bake for 2 hours, basting with remaining glaze every 30 minutes. If glaze runs out, use pan juices. The ham should be golden, sticky and glossy.
  • Rest and finish: Let the ham rest for at least 20 minutes. Before serving, baste once more as the glaze thickens while cooling. Drizzle any extra pan juices over slices.

It is the side that steals the show, the one everyone goes back for “just one more spoonful.” Pile it high, scrape the dish clean, and soak up the joy of food that brings everyone together. You have earnt a day of fun, family, and feasting and trust us, this cheesy number will be remembered long after the plates are cleared. Potato Bake Seasoning

Time: 15 mins prep plus 1 hr 20 mins cooking
Callouts: Festive favourite, creamy and cheesy, perfect for sharing

Ingredients

  • 600 g potatoes (non waxy), sliced as thinly as possible
  • 300 g macaroni pasta
  • 1 cup (250 ml) milk
  • 185 ml thickened cream
  • 50 g butter
  • 1 tbsp olive oil
  • 2 tbsp all purpose flour
  • 1 tbsp honey or natural sweetener
  • 2 cups (200 g) shredded cheddar cheese (divided)
  • 1 cup (100 g) shredded parmesan or gruyere
  • 3 onions, thinly sliced
  • Panko crumbs Chives, thinly sliced (or swap for Mingle Furikake for extra umami)

Method

  • Preheat oven: Set to 180°C.
  • Caramelise your onions: In a pot, add butter, olive oil, honey and onions and cook on low until caramelised (about 50 minutes). Be careful not to burn, these should have a jammy texture.
  • Set aside: Place onions aside to be used as the top layer of your dish.
  • Make the liquid mix: Add together milk, cream, stock and Mingle’s Christmas Potato Bake Seasoning. Simmer for 2 minutes whilst stirring all ingredients together.
  • Assemble the bake: Add the uncooked macaroni into the base of your oven dish. Sprinkle over one third of the cheese. Add a layer of potatoes and another layer of cheddar cheese. Repeat until all potatoes are used.
  • Add liquids: Pour the liquid mix over the bake. Press down potatoes so they are just covered. Top evenly with caramelised onion and remaining cheese.
  • Bake until tender: Cover with foil and bake for 60 minutes, or until potatoes are fork tender.
  • Finish with crunch: Remove foil. Sprinkle with panko crumbs and chives (or Mingle Furikake). Bake for a further 20 minutes, until golden. For extra crisp, grill for the final 5 minutes.
  • Rest and serve: Let sit for 5 to 10 minutes before serving.

Spiced, nostalgic, and a little bit extra, just like Christmas should be. Mingle’s Gingerbread Spice Sweet Topper has the magic to transform just about anything into a festive treat. Sprinkle it over ice cream, pancakes, yoghurt, or whipped cream for instant gingerbread goodness. However you use it, it’s the shortcut to Christmas cheer in every bite.

Ingredients

Method

  • Whip cream mixture: Beat cream, mascarpone, icing sugar, and Mingle Gingerbread Spice until soft peaks form.
  • Layer the biscuits: Spread a generous spoonful of spiced cream between each biscuit to create a log shape on a serving platter. Keep layering until all biscuits are used.
  • Cover log: Use the remaining cream to completely cover the biscuit log. Smooth with a spatula.
  • Chill overnight: Cover and refrigerate overnight to allow biscuits to soften and the flavours to mingle.
  • Decorate and serve: Before serving, dust with extra Mingle Gingerbread Spice and scatter crushed gingerbread biscuits over the top. Slice on the diagonal for the ripple effect.

Tips

  • Add thin slices of pear or apple between some of the biscuit layers for a fruitier touch.
  • Make mini versions by stacking three or four biscuits with cream and serving individually.
