Ingredients

500g chicken thigh fillets, cut into chunks

2 medium potatoes, cubed

1 large carrot, diced

1 zucchini, diced

1 tin crushed tomatoes (400g)

2 tbsp Mingle Tuscan Seasoning

2 cups chicken stock

1 cup baby spinach
Directions
Add all ingredients except spinach to slow cooker. Stir to combine.
Cook:
Low: 6 hours
High: 3 hours- Stir in spinach 10 minutes before serving.
Recipe Note
• Make it creamy: Add ¼ cup cream or a spoonful of ricotta before serving
• Swap: Use sweet potato instead of regular potato for a lower GI option
• Freezer Tip: Portion and freeze with some broth to avoid drying out
