500g beef mince
2-3 tbsp of Mingle’s Taco Seasoning (available at Coles and Woolworths)
- 400g can black beans, rinsed, drained
1 brown onion diced
- 1 small red onion, finely chopped
- 1 small red capsicum, finely chopped
- 200g punnet cherry or grape tomatoes, halved
- 1 corncob, kernels removed
Heat a frying pan over medium-high heat. Spray with oil. Add diced onion and cook until translucent. Then, add the mince and cook, stirring, for 3-4 minutes, breaking up any lumps with a wooden spoon.
Add Mingle’s Taco seasoning and beans. Stir through mince.
Put on low heat and allow mixture to cook for 10 minutes
Serve bowl with all toppings
