A juicy, lime-spiked beef skillet that’s more loyal than your last situationship. Just add tortillas and questionable life choices.
Ingredients
- 500g beef mince
- 1 red onion, diced
- 1 red capsicum, diced
- 2 tbsp Mingle Chilli & Lime Salt
- 1 can (400g) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 cup grated cheese
- 8 small tortillas (to serve)
Directions
Heat a large ovenproof skillet over medium heat.
- Brown beef mince, breaking it up as it cooks.
- Add onion, capsicum, and Mingle Chilli & Lime Salt. Cook until veggies soften.
- Stir in black beans and corn.
- Top with grated cheese and grill (broil) for 3–5 minutes until melty and golden.
- Scoop into tortillas and enjoy immediately.
