Ingredients
- 4 large jalapenos

2 tbsp Mingle’s Taco seasoning
- 3 tbsp sour cream
- ½ can of corn (saving some for topping)
- 2 short cut bacon rashers
- ½ cup shredded mozzarella cheese
- 1 tbsp finely chopped coriander
- 2 tbsp finely chopped spring onions
- 1 lime
- 2 tbsp greek yoghurt
- 1 tsp Mingle’s Guac & Avo seasoning
Directions
- Preheat oven to 180 degrees celsius
Cut the jalapenos in half and use a small teaspoon to remove the insides and seeds
Brown the corn in a pan on high heat and cook the bacon.
Once the bacon is cooked, chop into small pieces
Combine the sour cream, corn, bacon, mozzarella cheese, coriander, spring onions, taco seasoning and squeeze of lime juice
- 6. Stuff the jalapeños with the corn mixture and place in the oven for 10 minutes
Remove from the oven and rest on a plate
Serve with the greek yoghurt and guac & avo seasoning
