Sri Lankan Chicken Meatball Curry

@recipeclubwithj SRI LANKAN CHICKEN CURRY MEATBALLS 🥘👩‍🍳 (Serves 4) Ingredients: Chicken Meatballs * 500g chicken meatballs * ½ cup panko breadcrumbs * 1 egg (helps bind the mixture) * 1 tbsp Mingle Sri Lankan Curry Recipe Base  * Salt & Pepper to taste Curry Base * 1 tbsp coconut oil (or any neutral oil)  * 1 medium onion, sliced  * 2 large tomatoes, roughly quartered  * 3 crushed garlic cloves * 1 tsp grated ginger  * 2 tbsp Mingle Sri Lankan Curry Recipe Base  * ¾ cup chicken stock  * ½ cup of coconut milk  * [optional] veggies (1 diced zucchini)  * Squeeze of lime juice to finish  
[Optional] Serve with steamed rice or green beans.  Method 1. Make the meatballs by combining all ingredients into a bowl, gently mixing with hands.  2. Roll into small balls (around 1 tbsp meat each), set aside whilst making curry base.  3. In a large pan on medium-high heat, toast your Mingle Sri Lankan Curry Recipe Base for 30 seconds until fragrant.  4. Then add your oil and onion, cook onion for 3-5 minutes until softens.  5. Add garlic and ginger, cook for 30-60 seconds until fragrant.  6. Add your tomatoes and cook until softened and slightly jammy (3-4 minutes).  7. Add chicken stock and coconut milk, reduce heat to a gentle simmer.  8. Carefully add your meatballs and cover the pan with a lid for 10 minutes (they will cook in the sauce and stay nice and juicy!).  9. After 10 minutes remove lid, and add veggies if using.  10. Leave gently simmering for another 5-10 minutes, until veggies are soft with a slight bite, meatballs are cooked through and sauce has thickened to your liking.  11.
