110g thin egg-style noodles

100g lean chicken thigh

20g natural peanut butter

1 tsp light soy sauce

1 tsp fish sauce

1 tbsp hot sauce

1 tsp fried shallots

Diced spring onions

1/4 packet Mingle Satay seasoning
Directions
Coat chicken in satay seasoning and grill until cooked.
In a bowl, mix peanut butter, soy sauce, fish sauce, and hot sauce. Set a tablespoon worth of the mixture to the side.
Cook noodles per packet, add to sauce bowl and mix well.
Top with chicken, extra sauce that was set aside, shallots, and spring onions.
