Ingredients
- 250g chicken mince

2 tbsp Mingle’s Butter Chicken Spice Blend

2 soft shell tacos
-
1 cucumber, sliced
-
1 red onion, sliced
-
2 tomatoes, chopped
-
2 tbsp yoghurt (1 tbsp per taco)

Fresh coriander (for garnish)
Directions
Season the Mince:
In a mixing bowl, combine the chicken mince with 2 tbsp of Mingle’s Butter Chicken Spice Blend. Mix well to evenly coat the mince.
Cook the Tacos:
- Divide the seasoned mince into two portions. Press each portion directly onto a soft shell taco, forming a patty-like layer on one side.
Heat a non-stick pan over medium heat. Place the tacos, mince-side down, into the pan and cook for 3–4 minutes, or until the chicken layer is golden and fully cooked.
Flip the tacos and toast the other side for 1–2 minutes until the shell is lightly crispy.
Prep the Veggies:
Slice the cucumber and red onion, and chop the tomatoes into small pieces.
Assemble the Tacos:
- Place the cooked tacos on a serving plate, chicken-side up.
Spread 1 tbsp of yoghurt over the chicken layer of each taco.
Top with the sliced cucumber, red onion, and chopped tomatoes.
Finish with Garnish:
Sprinkle fresh coriander over the tacos for added freshness and flavour.
