Slow Cooker Shredded Beef or Pork Tacos

Ingredients
- 1.2–1.5 kg beef chuck or pork shoulder
- 1 sachet Any of Mingle’s Taco OR Fajita Recipe Base
- 2 tbsp tomato paste
- 2 tbsp of Mingle’s BBQ sauce
- 1 jalapeño, deseeded & diced (if you like some heat)
- ½ cup (120 ml) orange juice
- 1 tin of crushed tomatoes
- 1 cup (250m l) beef stock
- 2 brown onion, thinly sliced
- 2 tbsp of olive oil
- Serve mixture with tortillas, on pasta/rice or in quesadillas
Directions
Heat oil in a frying pan over high heat. Brown beef on all sides (about 2 minutes each) until browned. Transfer to slow cooker.
- In a small bowl, mix Mingle Taco OR Fajita Recipe Base with tomato paste, orange juice, tinned tomatoes, bbq sauce and beef stock. Add in jalapeño if using.
- Pour mixture over the beef in the slow cooker. Add onions.
Cover and cook:
Low: 8 hours- Shred beef in the slow cooker using two forks. Stir to coat in the juices. Transfer juice to pan and reduce on high heat if you want a more intense sauce.
- Serve with tortillas, rice or pasta with your favourite toppings.
Recipe Note
Tips
- Freeze: Shredded beef freezes well perfect for quick tacos, nachos or burritos later.
- Make it mild: Leave out the jalapeño for a family-friendly version.
- Batch Cook: This recipe makes plenty—great for parties or meal prep.
