Ingredients
- 1 tbsp olive oil

1 kg beef mince
- 1 brown onion, diced
- 1 green capsicum, diced
- 1 red capsicum, diced
- 1 lime, juiced
- 2½ cups (625 ml) beef stock
- 1 tbsp of tomato paste
- 400 g can red kidney beans, drained & rinsed
- 400 g can black beans, drained & rinsed
- 800 g can of crushed tomatoes
- 1 sachet Mingle Chilli Con Carne Recipe Base
- 1 tsp hot sauce or a chilli (optional)
- To serve: sour cream, sliced green onions, corn chips
Directions
Heat your oil in a large frying pan over a high heat. Add beef mince and brown for 3–5 minutes.
- Transfer beef to your slow cooker. Add all remaining ingredients. Stir well.
- Cook on low of 7-8 hours. Turn on high for the last hour if you want it to me a little less saucy.
- Serve on rice with with sour cream, grated cheese, coriander and corn chips.
Recipe Note
Tips:
- Freeze: Perfect for batch cooking, store portions for up to 3 months.
- Versatile: Serve over baked potatoes, nachos, or inside burritos.
- Make it mild: Leave out the hot sauce if cooking for kids.
