Ingredients

500 g diced chicken breast
- 1 red capsicum, chopped
- ½ red onion, chopped
- 300 ml chicken stock
- 3 tbsp tomato paste

300 ml cooking cream

1 sachet Mingle Buffalo Chicken Bake Seasoning

300 g bowtie pasta
- 1–2 cups spinach
- ¾ cup shredded cheese

100g of cream cheese
Directions
Add chicken, tomato paste onion, capsicum, chicken stock and Mingle Buffalo Chicken Bake Seasoning to the slow cooker. Stir to coat.
- Cover and cook on low for 4–5 hours.
Add spinach, cream & cream cheese and cook for 1 more hour on high to reduce the sauce stirring. Cook for longer if you prefer a thicker sauce.
Stir through shredded cheese before serving on pasta.

Tips:
- Freeze: Stores well in airtight containers for up to 3 months.
- Shortcut: Swap fresh spinach for frozen to save time.
- Spice Level: Add a splash of hot sauce if you like more heat.

Loved the bake , tonight im doing slow cook. I accidentally added the cream at the start instead of last hour , i had bacon needing to be used so diced that up in it went. Someone pray for me hahahahaha
This was fantastic. I substituted the cream for sour cream and added some eggplant and zucchini. Keen to try with some sliced jalapeño next time

My family LOVES the buffalo chicken made in the slow cooker. I did make a few changes, didn’t add the tomato paste (I don’t like it), and I added extra chicken stock and put the dried pasta in the slow cooker for the last hour.. to make it even easier to cook. I also added some halved cherry tomatoes. It’s now a favourite dinner.
