Slow Cooked Honey Garlic Chicken Potato

Ingredients

2 chicken breasts

½ packet of Mingle Honey Garlic BBQ Rub

2 tbsp soy sauce

1 tbsp apple cider vinegar or lime juice

1–2 tsp sriracha (optional, for heat)

¼ cup chicken stock
Directions
Place chicken breasts into the slow cooker.
Add Mingle Honey Garlic BBQ Rub, soy sauce, vinegar, sriracha (if using) and stock.
Cook on low for 4–5 hours or high for 2–3 hours until tender.
With 1 hour to go, put your baked potato in to cook at 180°C fan.
Remove chicken, shred, then return to the sauce and let it soak for 10–15 minutes. Optional: mix 1 tbsp cornflour with a splash of water and stir. Pour into sauce before returning chicken (this will help thicken the sauce if you like your sauce a little thicker!)
Serve on a baked potato with spring onions and sesame seeds.
