Ingredients

1kg chicken thighs, skinless and boneless

2 potatoes, chopped into large bite-sized chunks

2 carrots, peeled and chopped into large bite-sized chunks

1 brown onion, sliced into thick slices

1 packet Mingle Japanese Curry Recipe Base

1 can coconut milk
-
1 tbsp cornflour, mixed with 3 tbsp cold water

1 tsp salt

Steamed rice, to serve

Black sesame seeds, to serve (optional)
Directions
Layer the potatoes, carrots and onion into the base of the slow cooker.
Place the chicken thighs on top.
Sprinkle over the Mingle Japanese Curry base, then pour over the coconut milk. Press the chicken thighs down into the coconut milk (the chicken won’t be fully submerged).
Cover and cook on high for 3.5 hours, or on low for 7 hours, until the chicken is cooked through and the vegetables are tender.
Break the chicken up into large chunks in the sauce. Stir through the cornflour slurry and cook for a further 15-20 minutes, until thickened.
Serve over steamed rice, topped with a sprinkle of black sesame seeds, if using.
