Ingredients
-
1kg beef chuck, cut into large chunks
-
3 tbsp Mingle American BBQ Rub
-
1 tbsp olive oil
-
1 brown onion, sliced
-
3 garlic cloves, minced
-
1 cup beef stock
-
1 tbsp Worcestershire sauce
-
1 tbsp tomato paste
-
1 tbsp apple cider vinegar
-
1 tsp honey
-
Black pepper, to taste
-
Rice or potato wedges, to serve
-
Chopped parsley or spring onion, to serve
Directions
Add the beef to a bowl with Mingle American BBQ Rub and toss until well coated.
Heat olive oil in a frying pan over high heat. Sear the beef in batches until browned on all sides, then transfer to the slow cooker.
Add onion and garlic to the pan and cook for 2–3 minutes until softened. Transfer to the slow cooker.
Add beef stock, Worcestershire sauce, tomato paste, apple cider vinegar and honey. Stir to combine.
Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is tender and easily pulls apart.
Remove the lid and gently break the beef into chunky pieces.
If you want a thicker sauce, cook uncovered on HIGH for another 15–20 minutes until reduced.
Serve with rice or crispy potato wedges and finish with parsley or spring onion.
