Ingredients

150g lean boneless chicken breast (diced)

1/2 cup diced capsicums

1/4 cup diced red onions

1/4 packet Mingle Fajita seasoning

100ml chicken stock
-
20g shredded mozzarella cheese

1 tsp of tomato paste

Optional: Sliced avocado and taco sauce

½ cup uncooked rice (about 90g, rinsed)
Directions
Preheat the oven to 180°C.
Rinse the rice under cold water, then add it into a glass meal prep container along with chicken, capsicums, onion, seasoning, tomato paste and stock. Mix well to combine.
Top with cheese.
Bake for 40–50 minutes (cover halfway to prevent burning).
Let cool and store in the fridge.
Add optional toppings when serving.
