Ingredients

150g lean boneless chicken breast (diced)

1/2 cup diced capsicums

1/4 cup diced red onions
-
1/4 packet Mingle Fajita seasoning

100ml chicken stock
-
20g shredded mozzarella cheese

1 tsp of tomato paste
-
Optional: Sliced avocado and taco sauce
Directions
Preheat the oven to 180°C.
In a glass meal prep container, add chicken, capsicums, onion, seasoning, tomato and stock. Mix well.
Top with cheese.
Bake for 40–50 minutes (cover halfway to prevent burning).
Let cool and store in the fridge.
Add optional toppings when serving.
