This Satay chicken noodle salad is the best easy weeknight dinner! Simple & delicious.
Ingredients
- 
400g chicken breast, diced 
- 
100ml coconut milk 
- 
                
                
½ sachet Mingle Satay Recipe Base 
- 
1 carrot, sliced 
- 
1 capsicum, sliced 
- 
¼ red cabbage, sliced 
- 
½ cucumber, sliced 
- 
100g vermicelli noodles, cooked 
- 
¼ cup crushed peanuts 
- 
Fresh parsley, for garnish 
- 
                
                
½ sachet Mingle Satay Recipe Base 
- 
⅔ cup coconut milk 
- 
2–3 tbsp peanut butter 
- 
Juice of ½ lime 
- 
Water, to thin as needed

Directions
Marinate the Chicken
- In a large bowl, combine 100ml coconut milk with ½ sachet of Mingle Satay Recipe Base. 
- Add the diced chicken and mix until fully coated. 
Cook the Chicken
- Heat a pan over medium heat and cook the chicken until browned and fully cooked through. 
Prepare the Satay Sauce
- In a bowl, mix all the satay sauce ingredients together. 
- Adjust the consistency with water if needed. 
Assemble the Salad
- In a serving bowl, layer the carrot, cabbage, cucumber, capsicum, and vermicelli noodles. 
- Add the cooked chicken on top. 
Finish & Serve
- Drizzle the satay sauce over the salad. 
- Garnish with crushed peanuts and fresh parsley. 
- Enjoy!
