Ingredients
- 1 chicken breast (diced)

Iceberg lettuce

Vermicelli noodles
-
Handful of peanuts

1 carrot (shredded)

1 Lebanese cucumber (finely sliced)

1 avocado (sliced)

100ml chicken stock
-
125ml coconut cream
-
3 tbsp peanut butter

1 Mingle Satay Sachet
Directions
- In a bowl, combine coconut cream, chicken stock, peanut butter, and Mingle’s Satay Sachet. Stir well to combine. (Tip: Reserve a small amount of the sauce before adding the chicken — you’ll want this for topping later!)
Add diced chicken to the bowl and mix until well coated.
Cook the chicken in a pan over medium heat until golden brown and cooked through.
To assemble: Take a leaf of iceberg lettuce and fill it with peanuts, vermicelli noodles, shredded carrot, cucumber, avocado, cooked chicken, and a drizzle of reserved satay sauce.
Wrap it up, top with extra satay sauce, and enjoy!
