Prawn and Mango Tacos
Get ready to savour the taste of summer with our Prawn and Mango Tacos, ready in just 20 minutes! Seasoned to perfection with Mingle's Taco seasoning, these tacos are a delightful fusion of flavours. Succulent prawns meet the sweet juiciness of mango, all wrapped in a tortilla for a healthy and tropical weeknight dinner that's bursting with freshness. It's a quick and delicious escape to paradise on your plate!
1 Mango sliced in chunks
- 1 avocado, diced
- ½ pack coriander, finely chopped
2-3 tbsp of Mingle’s Taco Seasoning (available at Coles and Woolworths)
- 1 tbsp olive oil
250g of king prawns
- 6 taco shells or mini tortilla wraps
Mingle’s Guac and Avo Seasoning (available at Coles)
Cut the mango into small chunks and place in a bowl. Add the diced avocado and half of the finely chopped coriander. Add a little of Mingle’s Guac & Avo seasoning to add a little zing and tang! Stir all of that together to make a salsa.
Heat the oil in a frying pan over a medium-high heat. Before putting the prawns on the pan in a bowl season them stirring through Mingle’s Taco Seasoning. Cook the prawns for 3-5 minutes or until cooked through.
In a separate frying pan, lightly warm the taco shells or toast your tortilla wraps.
Time to serve the Tacos! Load with salsa and the prawns.
