Ingredients
- 1/2 cup yoghurt
- 2 tbsp finely chopped parsley

1/2 tbsp Mingle Garlic & Herb seasoning
- 2 eggs (Poached)

1 tbsp Mingle Peri Peri Rub
- 1 tbsp olive oil
- Optional: toasted sourdough
Directions
Combine yoghurt, garlic, parsley in a bowl. Leave some parsley out to top.
Poach 2 eggs (3-4 minutes in simmering water with vinegar).
- Over medium heat, stir together the olive oil and peri peri spice.
- To assemble, place the 2 poached eggs on top of the yoghurt mixture. Drizzle the Peri Peri & oil mix. Garnish with parsley & sea salt.
Optional: Serve with toasted sourdough.
