Ingredients

1 kg carrots, peeled and sliced
- Mingle Peri Peri Roast or Rub
- ¼ cup honey
- 1 tbsp olive oil
- 100g feta
- Thyme twigs
Directions
Preheat your oven to 180 degrees Celsius fan forced.
- Peel and slice carrots to your liking. Add carrots to a large bowl, sprinkle in the Mingle Peri Peri Roast or Rub packet, honey, and olive oil. Mix until all carrots are coated.
- Spread onto a baking tray and bake for 30-40 minutes, tossing halfway through.
- Remove from the oven, add to a platter, and crumble feta over the top, and add sprigs of thyme.
