Peri Peri Chicken Pocket
They’re high-protein, crispy, cheesy, and packed with flavour. One created by @kinda_healthy_sam and one Mingle’d-up twist of our own 👇
Ingredients
Chicken Crust
- 220g chicken mince

2 tsp Mingle Peri Peri Seasoning

20g grated parmesan cheese
Toppings (measure with your heart)
- Peri Peri Sauce (mix Mingle Peri Peri with aioli)

Red capsicum (fresh or jarred)

Sundried or fresh tomatoes

Red onion, finely sliced

Mozzarella cheese
-
Basil
Directions
- Mix chicken mince, Mingle seasoning and parmesan.
Line a tray with baking paper, spray with oil, and shape into a flat oval (1cm thick).
Spread sauce and toppings over one half.
Fold over and seal the edges.
Press extra parmesan on top.
Bake or air fry for 20–25 mins (fry last 2–3 mins for crunch).
Cool for 5 mins, slice and enjoy!
