Ingredients
- 1kg chicken thigh fillets (boneless, skinless)
- 1 sachet Mingle Peri Peri recipe base
- 4 large potatoes
- 1 red capsicum
- 1 green capsicum
- 1 red onion
- ¼ cup natural flavoured yoghurt
- 2 tbsp mayo
- 1 tbsp Mingle Peri Peri recipe base
For the sauce:
Directions
Preheat oven to 180°C.
- Cut potatoes into cubes, slice capsicums & red onion.
- Transfer potatoes to a baking tray, drizzle with olive oil and salt and cook in the oven for 20 minutes. After 20 minutes, add the capsicums & onion to the same tray, drizzle with more olive oil and salt. Roast for another 20 minutes.
- In a large bowl, combine chicken thigh with Peri Peri seasoning, setting aside 1tbsp of the seasoning for the sauce.
- Heat 1-2 tbsp oil in a large pan over medium heat. Cook the chicken in batches to avoid overcrowding. Cook chicken for 6 minutes on each side.
- To make the sauce mix yoghurt, mayo & the remaining Peri Peri seasoning.
- To assemble the containers, add potatoes, the capsicum/onion mix and chopped chicken.
- Drizzle sauce over the top or pack separately to add later!
