One Pot Sri Lankan Beef Cheek Curry

Ingredients

1kg beef cheeks
-
1 packet Mingle Sri Lankan Curry seasoning

Flour, for dusting

2 tbsp oil
-
1 onion, sliced

4 garlic cloves, crushed

1 can coconut cream (400ml)

11⁄2 cups beef
-
1 tbsp tamarind paste

1 tbsp soy
-
3 potatoes, peeled and cut into large chunks

Coriander, to serve (optional)

Toasted cashews, to serve (optional)

Rice, to serve
Directions
Preheat oven to 160°C.
Pat beef cheeks dry, then toss in a light dusting of flour. Heat 1 Tbsp of oil in a cast iron pot over high heat and sear beef cheeks on all sides until deeply browned. Remove and set aside.
In the same pot, add the remaining oil, sauté onion and garlic until softened.
Stir in remaining Mingle curry seasoning and cook for 1 minute, add coconut cream, stock, soy and tamarind paste. Return beef cheeks to the pot.
Cover with a lid and transfer to the oven. Braise for 3.5 hours, until beef cheeks are fork-tender and potatoes are soft.
Serve over rice, scattered with coriander and toasted cashews.
