Ingredients

6 mini taco tortillas

500g extra lean beef mince

300–500ml beef stock

250g crushed tomatoes

1 packet Mingle Fajita seasoning

225g corn kernels
-
225g black beans

100g shredded mozzarella cheese

1 brown onion (diced)

3 garlic cloves (diced)

1 tbsp tomato paste

Optional: Avocado, sour cream, jalapeños
Directions
Preheat the oven to 180°C.
In a skillet, brown onion and garlic, then mix in tomato paste.
Add beef mince and cook, then add corn, beans, seasoning, crushed tomatoes, and stock.
Layer three tortillas into the sauce. Gently press down and spoon sauce mixture over the top until the tortillas are submerged. Place remaining tortillas on top of the mixture.
Top with cheese and bake for 10–15 mins until melted and crisp.
Cool, portion into 5, and serve with optional toppings.
