Ingredients

1 tbsp extra virgin olive oil

1/2 red onion, chopped

2 cloves garlic, finely chopped

1 small red or yellow capsicum, chopped

1 medium zucchini, chopped
-
500g chicken thigh, cut into strips

Mingle Mexican Fajita recipe base, keep 1 tbsp

200g canned chopped tomatoes
-
1.5 tbsp tomato paste
-
1 cup uncooked long-grain white rice, rinsed

400ml hot chicken stock
-
Handful of mozzarella cheese mix
Chipotle Mayo:
-
1 tbsp Mingle Mexican Fajita recipe base
-
4 tbsp mayonnaise
Directions
In a frying pan, drizzle with olive oil and sauté the veggies until softened.
Add chicken to the same pan and stir regularly for 3 minutes. Sprinkle Mingle Mexican Fajita seasoning over the chicken mixture and stir through. Cook until fragment.
Stir through tomato paste, canned tomatoes, and rinsed rice. Pour over the chicken stock and mix well. Cook on low heat for 15-18 minutes.
Only mix through once or twice during this cooking time. Add an extra splash of water if the rice becomes dry.
Sprinkle over the mozzarella and cover with a lid until it has all melted. Drizzle over chipotle mayo and coriander.
