Ingredients

500g beef mince
- 1 onion, finely diced
- 1 red capsicum, diced
- 3 cloves garlic, crushed
- 1 Mingle Taco Recipe Base
- 1 tbsp tomato paste
- 1 tinned tomatoes (400g)
- 1 cups beef stock
- 300g fusilli
- 1 cup cream
- 1 cup grated cheese
Directions
Heat a wide pot over medium-high heat with some olive oil. Add the beef mince and cook until browned, breaking it up as it cooks.
- Add the onion, capsicum and garlic to the pot. Cook for 3–4 minutes until softened.
- Stir in the Mingle Taco Recipe Base and tomato paste. Cook for 30–60 seconds to toast the spices.
- Pour in the crushed tomatoes and stock. Stir in the dry pasta. Bring to a simmer, then cover and cook until the pasta is just al dente - around 12-15 minutues, stirring occasionally.
- Reduce the heat to low. Stir in the cream and cheese until melted and the sauce is glossy.
- Spoon into bowls. Top with crushed tortilla chips, jalapeños, a dollop of sour cream, coriander and a squeeze of lime.
