Mingle's Winner Winner Butter Chicken Dinner
Simple Healthy Recipe
Our healthy butter chicken..... no way, yes way. It is the good kind of finger lickin' chicken!
500 g of chicken strips or tofu
1 x Mingle Butter Chicken sachet
1 onion diced
2 cups of cubed pumpkin
2 cups of cauliflower floretts
2 carrots diced
400 ml tomato passata
300 ml of cream
3 tbsp of butter
200 ml of Chicken stock
PREPARE ingredients by chopping protein and veggies into bite size pieces. Heat 2 tbsp of coconut oil or ghee in a large pot over medium heat.
ADD onion and cook for 3 mins. Mix in protein, cooking until browned. Add remaining veggies and coat all ingredients in sachet contents.
STIR in tomato passata, stock and cream. Cover the pot and lower the heat to simmer for 20 mins, add butter.
SERVE with rice and a dollop of greek yoghurt.
