Mingle's Sahhhh Tasty Satay
Simple Healthy Recipe
Enjoy a mid-week Sahhh Tasty Satay number for the fam that’s “as good as the the local restaurant here!!” according to one of our customers Marg. We love Marg and Marg loves Mingle.
500 g of beef strips, chicken strips or tofu
1 x Mingle Satay sachet
1 onion diced
1-1/2 cups of green beans or sugar snap peas
2 cups of broccoli florets
1 medium capsicum, thinly sliced
5 tbsp of peanut butter
200 ml of coconut cream
200 ml chicken or veg stock
Rice or noodles
1 handful of corriander (optional)
PREPARE ingredients by chopping protein and veg into bite size pieces. Heat 2 tbsp of coconut oil or ghee in a large pot over medium heat.
ADD onion and cook for 3 mins. Mix in protein, cooking until browned. Add remaining veggies and coat all ingredients in sachet contents.
STIR in the peanut butter, coconut cream and stock. Cover the pot and lower the heat to simmer for 20 mins.
SERVE with grains or cauliflower rice. Top with coriander if you like.
