Mingle's Quick, Easy and Healthy Tacos
Simple Healthy Recipe
Holy, moly guacamole, these tacos are perfect for week-nights. When they ask what you're Tacoing about, it will always be Mingle!
500 g of beef strips, chicken strips or tofu
1 x Mingle Taco Fiesta sachet
1 onion diced
2 cups of cubed zuchini
2 cups of capsicum strips
2 carrots diced
50 ml of water
Guacamole (see Mingle recipe for inspiration)
Salsa (see Mingle recipe for inspiration)
PREPARE ingredients by chopping or grating the veggies. Heat 2 tbsp of olive oil in a large pot over medium heat.
ADD onion and cook for 3 mins. Mix in protein, cooking until browned. Add remaining veggies and coat all ingredients in sachet contents.
STIR in water and simmer for 10 mins.
SERVE with tortillas or in a grain bowl with additional toppings such as cheese, guacamole and salad.
