Mingle's One Pan Sri Lankan Pumpkin & Lentil Curry Delight
Get your curry game on with Mingle's hassle-free Sri Lankan Pumpkin & Lentil feast that's all about flavour and fun!
1 sachet of Mingle's Sri Lankan Curry Recipe Base
- 1x 400ml can of coconut cream
- 2 x 400g cans of lentils, drained and washed
- ½ butternut pumpkin, sliced into 1cm wedges
- A dollop of Greek Yogurt (per serving)
- Handful of coriander, chopped (optional)
Preheat your oven to 220°C. Slice the pumpkin into 1cm wedges and ensure the lentils are drained and washed.
In a bowl, combine the Mingle's Sri Lankan Curry Recipe Base with the coconut cream until well mixed.
In an ovenproof pan, mix together the lentils, pumpkin wedges, and the creamy curry mixture.
Place the pan in the oven and bake at 220°C for 25 minutes, aiming for tender pumpkin pieces and a well-cooked curry.
Upon serving, garnish the curry with a dollop of Greek yogurt and sprinkle with coriander (if desired).
