Mingle's Meal-Prep Masterpiece: Garlic & Herb Chicken with Feta and Quinoa!

A block of feta
500g of chicken breast
Leftover veggies.. we used: broccolini, zucchini, cherry tomatoes, beans
2-4 tbsp Mingles Garlic and Herb Seasoning
Place feta in the centre of the pan, add in veggies around the outside.
Sprinkle with olive oil & Mingles Garlic and Herb Seasoning.
Add in chicken breast and season with Mingles Garlic and Herb Seasoning!
Preheat oven to 180 degrees Celsius
Cover pan with foil and cook contents for 20 mins
Remove foil and cook for a further 10-15 mins
Take dish out and allow to cool slightly.
Remove chicken and place aside to slice
Add quinoa to feta veggie bake & stir through ensuring all of the feta is broken up and evenly distributed.
Dish up with sliced chicken, garnish with basil or parsley and enjoy!
