Ingredients
- A handful of cherry tomatoes
- 4 medium-sized potatoes, boiled and baked

2 tbsp of Mingle's Garlic and Herb Seasoning
- A small cup of pine nuts, lightly baked
- A mix of spinach and rocket (around 200g)
- A chunk of feta, crumbled
- 1/4 cup of olive oil
- A squeeze of fresh lemon

Directions
Preheat the oven to 200°C (390°F).
Place the cherry tomatoes on a baking sheet, ensuring they’re spaced out, and roast until slightly charred.
Once the potatoes are boiled, sprinkle them with Mingle's Garlic and Herb seasoning and bake until they have a nice golden crust.
Lightly toast pine nuts in the oven until golden brown – keep an eye on them so they don’t burn!
In a large bowl, combine the spinach, rocket, roasted cherry tomatoes, baked potatoes, and toasted pine nuts. Toss gently.
Whipping up the Green Goddess Dressing:
In a mixing bowl, pour in the olive oil.
Add a squeeze of fresh lemon juice.
Finish with a confident shake of Mingle’s Green Goddess dressing and whisk until smooth.
Serving the Salad:
Drizzle the dressing generously over the salad mix.
Sprinkle crumbled feta on top.
Give it one last gentle toss and serve immediately.
