Mingle's Chili Con Carne

Ingredients:

500g beef mince or plant based mince/tofu
1 X can of black beans
1 X carrots (cubed)
2 X onion (diced)
1 X stalk of celery (diced)
1 X green capsicum (cubed)
1 X red capsicum (cubed)
1 X canned tomatoes (400g)
1 X bunch of coriander (chopped)
Mingle Spicy Mexican Seasoning
1 X can of chickpeas (400g)
500ml of stock (beef or vegetable)
3 X tablespoons of olive oil
2 X tablespoons of tomato paste
1 X chilli de-seeded
2 X garlic cloves (chopped)
1 X lime
1 X sour cream tub

 

Method:

1. Heat pan with olive oil.
2. Sweat onions, garlic, chilli, carrots and celery until translucent.
3. Add mince and brown.
4. Add 3 tbsp of Mingle Spicy Mexican Seasoning and capsicum.
5. Add can of tomato, stock and tomato paste - bring to a simmer.
6. Once the sauce has reduced and thickened, add black beans and chickpeas.
7. Top with salt and pepper to taste, a sprinkle of coriander, a dollop of sour creme and a squeeze of lime.
8. Serve with Mingle sides & rice.

 

 

Mingle's Chili Con Carne Ingredients
Chop onions, garlic, chilli, carrots and celery and add to frypan
Cook onions, garlic, chilli, carrots and celery until translucent
Fry onions, garlic, chilli, carrots and celery
Add Mince to frypan and cook until brown
Add Mingle Spicy Mexican Seasoning and capsicum to mince.
Add capsicum to  Mingle Mince and cook through.
add black beans and chickpeas to Mince.
Plate up Mingle's Chili Con Carne
