Mingle's Char Grilled Mexican Chicken
Ingredients:
4 x chicken thighs or tofu/cauliflower steak |
2 X limes |
1 X tablespoon of olive oil |
2 X minced garlic cloves |
1 X handful of coriander (chopped) |
Mingle Spicy Mexican Seasoning |
1 X de-seeded chilli (do not add if you do not like spicy food) |
Method:
1. Mix coriander, 2 x tablespoons of Mingle Spicy Mexican Seasoning, chilli, garlic, oil and lime juice into a thick paste. |
2. Rub over chicken thighs and ideally leave for a min of 30 mins covered in the fridge but fine to eat straight away. The chicken can be replaced with tofu or a cauliflower steak. |
3. The chicken can be baked in the oven at 180 C for 15 minutes, fried in a pan or grilled on a BBQ. |
4. Serve with Mingle Sides. |
