Mingle’s Savoury Satay Drumsticks with Peanut Noodle Salad
Mingle's Satay drumsticks are the showstopper at the dinner table, perfectly complemented by a vibrant and flavourful peanut noodle salad!
- 3 tbsp roasted peanut butter
- 2 tsp soy sauce
1/4 cup of Mingle's Everything Bagel Chilli Oil
- 1 tsp brown sugar (optional)
- 1 clove garlic (minced)
- 1/2 tsp grated fresh ginger
- Juice of 1 lime
- 1 packet vermicelli noodles
Thinly sliced spring onions
- A bunch of coriander, chopped
- 1 cup roasted peanuts
- 1/2 cup dried chillies (optional for extra heat)
1 Sachet Mingle's Satay Recipe Base
- 2 tbsp soy sauce
2 tbsp Mingle's Sweet Chilli Sauce
- 1/4 cup warm water
- 8 chicken drumsticks
In a blender, mix the roasted peanuts and dried chillies until coarsely ground.
In a bowl, combine your peanut-chilli mix, Mingle's Satay Recipe Base Sachet, soy sauce, Mingle's Sweet Chilli Sauce, and warm water
Coat those drumsticks generously with the satay mix, letting them mingle and marinate for at least 30 minutes.
Preheat your oven or grill. Once ready, pop in the drumsticks, turning occasionally until golden brown and dancing with flavour.
For the Dressing:
In a bowl, combine all dressing ingredients.
Give it a good whisk until smooth and set aside.
For the Salad:
Boil water and cook the vermicelli noodles until tender. Drain and rinse with cold water.
In the meantime, playfully shred your veggies - the more colors, the merrier!
Mix the noodles with the veggies, and if you're diving in right away, toss in that delightful dressing.
