Ingredients
- 200 g cottage cheese
- 1 cup (250 g) plain yoghurt
- 2 eggs
- ¼ cup (30 g) cornflour
- ¼ cup (60 ml) maple syrup
- 1 tsp vanilla bean paste
- 1–1½ cooked apples, diced
- 1 tbsp Mingle Apple Pie Sweet Topper
Directions
Preheat oven to 160°C. Line a 20 × 15 cm baking dish with baking paper.
Place cottage cheese, yoghurt, eggs, cornflour, maple syrup, vanilla bean paste and Mingle Apple Pie Sweet Topper into a blender.
Blend until smooth. Pour mixture into prepared dish. Scatter diced apples over the top.
Bake for 40–45 minutes, or until centre is set. Cool, then refrigerate for at least 2 hours before slicing and serving.
Recipe Note
Top it off: Dust with extra Mingle Apple Pie Sweet Topper before serving for that warm spiced finish.
Make ahead: Best baked the night before and chilled for the next day.
Dessert hack: Serve with a dollop of Greek yoghurt or whipped cream for a festive touch.
