Ingredients
- 80 g rolled oats
- 1 medium banana, mashed (reserve half for topping)
- 20 g chia seeds
- 40 g vanilla protein powder
- 300 ml almond milk
- 1 tsp baking powder
- 1 tbsp Mingle Gingery Biscuit Sweet Topper
- 30 g milk chocolate chips
- ½ medium banana, sliced (for topping)
Directions
Preheat oven to 180°C.
In a large mixing bowl, combine oats, mashed banana, chia seeds, protein powder, almond milk, baking powder and Mingle Gingery Biscuit Sweet Topper.
Stir until smooth and evenly mixed. Divide mixture between 2 oven-safe dishes.
Top with sliced banana and sprinkle with chocolate chips, pressing them lightly into the batter.
Bake for 30 minutes, or until golden and set. Cool slightly before serving.
Recipe Note
Freeze: Store portions in the freezer for up to 2 months. Reheat in the oven or microwave.
Customise: Swap chocolate chips for berries or nuts for a different twist.
Dessert it up: Serve warm with a scoop of vanilla yoghurt or ice cream for a cosy treat.
