Jerk Chicken Taco Cups

Ingredients
- 300g chicken breast (Diced)
- 12 tortillas
- ¾ cup mozzarella cheese
- 15g of Mingle’s Jerk seasoning
- 1 avocado
- ½ lime juice
- Handful parsley

- Place tortillas on a cutting board and cut into strips. Slice the ends off, turn the tortilla and slice it lengthwise. Then, slice the ends.
Cook in the oven for 10 minutes on 180 degrees (or until crispy/hard).
In a bowl, add your chicken, drizzle of olive oil and 15g of Mingle’s Jerk Chicken Seasoning.
Heat a pan on medium high, add your diced chicken breast & cook for 10-15 mins or until fully cooked.
Place chicken into the cups followed by mozzarella. Cook in the oven again for 10 minutes or until cheese is golden brown.
Make your guac topping by combining all the ingredients in a bowl and smashing with a fork.
Top the Jerk chicken cups with guac & sprinkle some parsley.
