Ingredients

150g chicken mince

1 packet dried instant noodles (40g)

60g broccoli
-
1/2 carrot (julienned)

50g edamame beans
-
Handful chopped peanuts (5g)

150ml chicken stock
-
30ml light coconut milk
-
1/4 packet Mingle Japanese Curry seasoning
Directions
Cook chicken mince in a pan for 5 minutes or until browned and cooked.
Add vegetables and cook until soft.
Add dried noodles, seasoning, stock and coconut milk.
Cover and steam until noodles are soft. Stir and serve.
