This easy butter chicken gives you all the delicious flavour without any of the nasties thanks to Mingle Seasoning.
Healthy Butter Chicken Extravaganza with Mingle

700g free range chicken breast, diced
Few spoonfuls of coconut yoghurt
Half sachet of Mingle's Butter Chicken Recipe Base
1 x brown onion, diced
1 x medium eggplant, sliced
Remaining half sachet of Mingle's Butter Chicken Recipe Base
1 x 400ml can coconut milk
1 cup vegetable stock
Coconut oil or extra virgin olive oil for cooking
Rice to serve
Dice the chicken and add to a bowl.
Coat with half of Mingle's Butter Chicken Recipe Base and a few spoonfuls of coconut yoghurt.
Set aside while you chop your veggies.
Cooking the Main Dish
Heat your choice of oil in a large pan on medium heat. Cook onion until translucent.
Add chicken & stir until just browned.
Add the eggplant & the remaining Mingle's Butter Chicken Recipe Base. Stir for a couple of mins, coating everything in the seasoning.
Add passata and coconut milk, then stir.
Stir in the stock, cover, and simmer on low heat for 20 mins.
Serve with rice and enjoy!
