Ingredients

½ x cup of extra virgin olive oil

3 x tbsp of red wine vinegar

4 x tbsp of Mingle’s Green Goddess (available at Coles)

1 x deseeded red chilli (if you like spice)

Salt to taste

½ cup of finely chopped parsley
Directions
Mix all ingredients together and leave for 30 minutes to rehydrate the dry spices. Use as a marinade for any meat/fish.
Marinade for a minimum of 1 hour but overnight is best
