130g Frozen chicken dumplings

120ml chicken stock

30–40ml light coconut milk

1/2 tsp crushed garlic

1/2 tsp crushed ginger

20g cherry tomatoes

Bok choy
-
1/4 packet Mingle Green Curry seasoning
Directions
Preheat the oven to 180°C.
Add all curry ingredients (stock, coconut milk, garlic, ginger and seasoning) to a baking dish.
Mix well, top with bok choy and dumplings.
Bake in the oven at 180°C for 15–20 minutes.
Enjoy as is or serve with rice if desired.
