Green Beans with Whipped Ricotta + Everything Bagel

500g green beans, trimmed
- 1 cup ricotta
- 2 tbsp Olive oil
- 1/2 lemon juice
- 1 cup panko crumbs
- 2 tbsp Mingle Everything Bagel Seasoning
- Extra olive oil for crumbs and beans
Directions
Cook the green beans in boiling salted water for 2–3 minutes until they start to turn bright green. Cool in cold water, drain well, and drizzle lightly with olive oil.
- Prepare the ricotta base by whipping together ricotta, lemon juice, and olive oil in a large bowl until smooth. Keep this refrigerated until needed.
- For the crunchy topping, spread panko crumbs onto a baking tray. Top with Mingle Everything Bagel seasoning and a drizzle of olive oil. Gently mix and spread evenly. Bake at 180°C for 5–10 minutes until golden.
- To serve, spread the whipped ricotta onto a platter. Add the green beans on top, cover generously with the everything bagel crunch, and finish with a drizzle of olive oil over everything.
