Fry-day Nights with Mingle's Chilli Con Carne Fries!

- 1 tbsp oil
- 1 onion, diced
- 500g beef mince
- 2 tbsp tomato paste
1 packet of Mingle's Chilli Con Carne Recipe Base
- 1 400g tin black beans
- 1 400g tin tomatoes
- 250ml beef stock
- 1 cup of perfect melt cheese mix
- Chips of your choice
- Sour cream
- Smashed avocado
In a pan over medium heat, warm up the oil and sauté the onion until it's all soft and dreamy (around 3-4 minutes).
Dive in with the beef mince! Use a wooden spoon to break it up and cook until it’s got that luscious brown hue (around 5-6 minutes).
Stir in the tomato paste and the contents of the Mingle's Chilli Con Carne Recipe Base packet. Let it mingle for 2 minutes.
Pour in the black beans, tomatoes, and stock. Reduce the heat and let the flavours simmer and get to know each other for 20 minutes.
Afterwards, sprinkle over the cheese and cover your pan. Give it about 5 minutes or until the cheese is all oozy and melty, like a cheesy hug for your fries.
Lay your fries on a plate, shower them with the Chilli Con Carne mixture, add a dollop of sour cream and smashed avo, and dive right in!
