Ingredients
- Edamame wraps
- 2 cups frozen edamame, thawed
- ½ cup mozzarella, grated
Toppings:
- 1 avocado, mashed
- 2 fried eggs
- Crispy Chilli oil
- Coriander leaves
Directions
Preheat your oven to 180°C. On a lined baking tray, arrange your edamame into three flat, even rounds.
Generously sprinkle mozzarella and Mingle Guac & Avo seasoning over each edamame pile. This is the "glue" that turns the beans into a crispy, golden crust!
Bake in the oven for 12–15 minutes. Let them sit for a minute or two!
Top each crispy disc with:
- Smashed avocado
- Crispy fried egg
- Drizzle crispy chilli oil
- Fresh coriander
