Citrus Zest Parmesan Smashers: A Burst of Flavour in Every Bite!

These golden, crispy gems start with tender boiled potatoes that are lovingly smashed and seasoned with the vibrant zest of citrus and the savory allure of Parmesan cheese. 500g baby potatoes (Yukon Gold or Carisma)
2 x tbsp extra-virgin olive oil
3 x tbsp of Mingle’s Citrus Pepper Seasoning (available at Coles)
5 s tbsp grated Parmesan cheese
Preheat oven at 200 degrees celsius
- Place potatoes in a large pot, cover with water and bring to a boil. Cook, covered, until fork-tender, about 15 minutes. Drain.
Sprinkle Parmesan Cheese and Seasoning onto a tray. Drizzle 1 tablespoon of oil on a large rimmed baking tray.
dd the potatoes and, using the bottom of a glass coated with cooking spray, gently smash each potato to flatten. Drizzle with the remaining 1 tablespoon of oil. Then finish off and sprinkle over some more Mingle Citrus Pepper Seasoning and Parmesan.
Bake the potatoes flipping once halfway, until crispy, about 25 minutes.
