Citrus Pepper Crunchy Schnitzel: Zest in Every Bite!

2 tbsp of Mingle’s Citrus Pepper Seasoning (available at Coles)
- 1 1/2 cups (110g) panko breadcrumbs
- 1/2 cup (75g) plain flour
- 2 Coles Brand Australian free range eggs, lightly whisked
Olive Oil for frying
4 small Chicken Breast fillets, spilt in half crossways
Any side salad you wish
In a shallow bowl, mix together Mingle's Citrus Pepper seasoning and breadcrumbs. .
In two separate shallow bowls, place flour in one and egg in the other
Take each chicken piece, coat it in flour (shaking off any excess), dip it in the egg, and then generously cover it with the breadcrumb mixture.
In a large frying pan, pour enough oil to reach a depth of about 1cm. Heat it over medium heat.
Cook the chicken for approximately 5 minutes on each side, or until it turns a golden hue and is thoroughly cooked.
Once done, let the chicken pieces drain on a plate lined with paper towels to remove excess oil.
Serve with side salad
